Quark & Blueberry Protein Pancakes with Blueberry Compote Recipe: 

Ingredients (Serves 2-4) 

Pancakes  

  • 250g Lindahls Quark 
  • 2 Eggs 
  • 100g Milk 
  • 120g Self Raising Flour  
  • 80g Fresh Blueberries  
  • 5g Baking powder  
  • 5g sugar  
  • 2g Cinnamon  
  • 2g salt

Blueberry compote  

  • 120g Blueberries  
  • 10g honey  
  • 5g Cornflour  

Method:

Pancakes: 

  1. In a mixing bowl, whisk together the quark, eggs, and milk until smooth. 
  2. In a separate bowl, whisk together the self-raising flour, baking powder, sugar, cinnamon, and salt. 
  3. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix. 
  4. Gently fold the fresh blueberries into the batter. 

Heat a large frying pan or griddle over medium heat. Lightly grease the pan with butter or oil. Pour ¼ cup of batter onto the hot pan for each pancake. Cook for 2-3 minutes per side, or until golden brown and cooked through. 

Blueberry Compote: 

  1. In a small saucepan, combine the blueberries and honey. Heat over medium heat, stirring occasionally, until the blueberries begin to soften and release their juices.
  2.  In a small bowl, whisk together the cornflour and a tablespoon of cold water to make a slurry. Gradually add the slurry to the blueberry mixture, stirring constantly, until the compote thickens. Reduce the heat and simmer for 1-2 minutes, or until the compote reaches your desired consistency.
  3.  Serve the pancakes warm, topped with the blueberry compote.

Cottage Cheese on Sourdough with Grilled Figs, Hot Honey & Dill Recipe: 

Ingredients (Serves 2)

Grilled figs  

  • 4 Figs  
  • 10g sugar  

Hot honey  

  • 50g honey  
  • 1 red chilli  
  • 1 clove of garlic  
  • 1 tbsp red wine vinegar  

To finish

  • 1 Pot of Lindahls Cottage Cheese 
  • 2 slices sour dough 
  • 1 tbsp hot honey 
  • 5g Dill 

Method:

Grilled figs 

1. Slice the figs in half and sprinkle the cut side of the figs with sugar. Grill the figs, cut-up until caramelised.

Hot honey 

  1. Finely slice the red chilli and garlic 
  2. In a small saucepan, combine the honey, chopped red chilli, chopped garlic, and red wine vinegar. Heat the mixture gently until it is well combined and infused with the chilli and garlic. 

To finish 

  1. Toast the sourdough slices. 
  2. Spread the cottage cheese on the toasted sourdough. Top with the grilled figs. Drizzle with the hot honey. 
  3. Sprinkle with fresh dill and serve immediately
